Yield: 15 servings
- 1 1/2 cups of fresh medjool dates, pitted
- 1/4 cup chia seeds
- 1/4 cup cacao powder
- 1 tablespoon vanilla extract or paste
- 1 tablespoon coconut oil
- 1/2 cup shredded coconut
1. Place all ingredients, except shredded coconut, in a food processor and pulse until combined.
2. Your mix should end up a little sticky, willing to clump together and easy to roll.
3. Shape into balls and roll in coconut.
4. Store in a container and eat straight from the freezer.
